Frozen Cod: A Love Story

I've never had success cooking frozen fish.  Until now.

At the dentist's office the other other day, I saw a recipe in an Oprah mag that allowed for cooking frozen fish without thawing it first. I asked the dentist's assistant to photocopy it for me and she obliged. I made it the other night and it was a success.  Here is the recipe as I made it:

Cod with Lemon and Capers

In a bowl toss 4 frozen cod fillets* (I bought one package at Trader Joe's that contained 2 large fillets); with 1/2 sliced lemon; 2 Tbsp olive oil; 2 Tbsp chopped onion; 1 Tbsp capers; and 1/4 tsp. crushed red pepper; Season with salt and pepper.  In a skillet, heat 2 Tbsp. olive oil over medium-high heat.  Add fish mixture and cook; covered, 5 minutes.  Flip fillets; cook 3 minutes.

*I defrosted the fish in the microwave for a couple minutes; just long enough so I could separate the two large fillets of frozen cod and cut each in half to create 4 small fillets.


(The original recipe called for 1/2 cup olives and 2 Tbsp each chopped fresh parsley and red onion.  I substituted some chopped white onion and some dried basil.  I left out the olives b/c I thought it would be plenty salty with the capers  I like spicy food but if you don't you should leave out the crushed red pepper.)
